What temperature should a non-overclocked Athlon XP 2000+ at? I have way too many fans in my case and I am wondering how many I need to keep to keep my Athlon XP running well.

Depends on several factors:

Ambient System Temp
Motherboard
Heatsink
Thermal Compound

Once we know these, we can give you a better idea what a max "reasonable" temp for your setup will be.

Sorry- Here is my setup:
Athlon XP 2000+
Soltek SL-75DRV5
Artic Silver 3 thermal paste
Themaltake 6cu+ heatsink
My amient temperature is around 28 - 31 C, thats the thermometer on the motherboard.

And again, I want to know the best temperature to try to maintain to prolong the chips life.

from the limited soltek mb temps i've seen, i'd suggest trying to keep your CPU temp within 25C or so of ambient case temp, in your case, within 50-55C and you should be fine.
