I'm pretty sure there's no easy way to do it. Skpe hasn't installed the functionality to do so supposedly due to the threat of lawsuits because people might not know they're being recorded. One of the guys on the Skype forum figured out a crazy hack where you install 2 administrator accounts, use a program called virtual audio cables, and do a 3 way call with 2 skype clients and it worked pretty well when I tested it. But it was so cumbersome that I only used it once. Very, very annoying that there's nothing available for recording conversations. I've told several people there's quite a bit a money to be made if someone was to write a program that did just that and sold it for like $20.

I bought one of these which lets me talk on Skype from any normal phone, a cordless in my case. Calls can be both placed from and recieved from the normal phone. I am therefore not bound to the PC when I want to chat on the phone.
Software like this easily records the calls as .WAV or .MP3 files.
Let me know if you have questions.
