I use the Samsung Note 10.1 (with the Wacom stylus) for class note-taking. That coupled with the Lecture Notes App works really well for me.
I picked up the tablet refurbished for $300, but you could even get it for $200 these days refurbished. I didn't really care about the low resolution. It's a great functioning tablet that meets my needs for classes.
Lecture Notes is a really powerful app that keeps me organized. You can have separate notebooks for each class. It's allows you to import pdf files and write on them. It also allows for easy pdf exporting of your notes if you need to print them to turn in homework.
I have a Galaxy Note 2 as my phone, so I have Lecture Note installed there as well. I don't take any notes on my phone, but it's there in case I need it. I also use an app called Dropsync to keep my Lecture Notes' backed up to my dropbox account and synced to my phone.
