System specs of a computer I'm building, any suggestions?

I'm going to overclock the FSB to 400 Mhz, hence the PC3200.

I heard people are having a really easy time OC-ing the XP 2500-M's at default voltage. Might want to look into those.

What's the difference between the M and non-M?

The M stands for mobile, theyre barton core cpus clocked at a 266mhz fsb for laptop applications. Many people have been able to easily overclock them to 3200+ speeds with a 400mhz fsb due to them being unlocked form the factory. I would suggest those if you want to overclock. Theyre a great value.
