help me I usually cook it on the grill and slap a little olive oil on it then:

A - sprinkle some hot/Cajun style spice all over it.

2: cover it in pepper.

or, put some type of "fish seasoning" on it.

please submit all entries in writing in this thread no later then 4:30 p.m. EST.

winning entry receives nothing.

Swordfish holds up on the grill, so I'd suggest that. Olive oil, salt, pepper. Grill it, then finish with some lemon juice and a little bit more good olive oil.

That or if you have some saved up bacon fat, a little bit of that over the top instead of the olive oil at the end. Just a little though, still supposed to taste like swordfish.

cajun seasonings, garlic powder, cayenne pepper, sea salt, and olive oil (not necessarily in that order) is my default fish seasoning.

if I'm roasting, I'll cut up some lemon slices and cover the fish with them in the pan or maybe squeeze a lemon into the olive oil before putting the oil on the fish if I'm pan frying.
