sweet potato fries > regular ol' potato fries

its not that hard to make potato fries.

use russet potatoes, keep the oil at 325F and when finished dust with salt, pepper, garlic powder and onion powder for awesomeness.

You should blanche them first, then fry at higher temperature the 2nd time for perfect fries...

I always get sweet potato fries when I go somewhere that has them. A lot of times they are kind of soggy/not crisp. Yet regular fries from the same place are. So I'm guessing they need to adjust their cooking methods. But when they actually come out right, they are delicious!
Sweet potatoes have a high starch content which makes it difficult to get them crispy. What I do is soak them in cold water for an hour or two, dry them off thoroughly, then shake them in a bag with cornstarch to give the exterior a very light coating. Fry them in peanut oil at 350F for 3 - 4 minutes. Makes for sweet potato fries that are perfectly crispy on the outside.

Yea, I've found that when they're done right they are AMAZING. But it's rare to get them done right, thanks to this thread I guess I have a better idea of why that is.

Even better, 3 times total. I did this after I saw Paula Dean do it on her show. best fries evar. Double fried are delicious though, and I refuse to eat ones that were only fried once. Also non blanched fries are just ugh.

No. Sweet potato fries are disgustingly overrated. I will take regular potatos fries in steak or waffle form over the sweet potato variant anyday.
