do they fry just the same way? or do they need less/more time? I love baked sweet potatoes... but one thing i wonder about frying them is sweet potatoes are so soft when cooked, so i imagine fries made out them be floppy?

They're good once in awhile. Indeed I've had some amazing sweet potatoes fries.

Because they're too sweet, you get sick of it fast. Potato wins.

Made sweet potato tater tot casserole the other night. It was fucking awesome.

Base:
1 can cheddar cheese soup
1 cup chicken broth
1 lb. italian ground turkey, browned in a skillet
frozen green beans, carrots, broccoli, and cauliflower, or whatever veggies you want
1/2 or 1 tsp ground chipotle pepper (depending on how hot you want it)
1/2 or 1 tsp crushed red pepper (depending on how hot you want it)
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2c stone ground grits

Topping:
1 bag sweet potato tater tots
brown sugar
salt
black pepper

Mix all base ingredients but the meat and vegetables in a pot and heat until grits thicken the sauce. Stir in meat and veggies then transfer to a casserole dish. Smooth out the top of the mixture flat.

Top with salt and pepper to taste, then sprinkle brown sugar over the top. Top with sweet potato tater tots then sprinkle them with chili powder. Cook at 400F for at least 30-35 minutes to crisp the tots.

Fire some onto a plate and sprinkle your favorite cheese on top.

I've tried them once, I won't be getting them again.. ever.

This, and there was actually a place I went to eat where I ordered "fries" and got these! I could understand a place that has both on the menu. But if I order "fries" and you bring me sweet potato fries, I'm fighting you.

I had some a few weeks back - they were amazing. But it looks like the cook didn't know how to do them properly because they all looked burnt on the outside. They were, however, nice and chewy on the inside.

I don't like sweet potatoes at all. In any form.

Thus, regular potato fries > yam anything 😛

Yeah, I like them far more than regular fries. Some great ones around town here.

Making fries at home from a starchy tuber of any kind is so effing labor intensive and chancy as to get decent results that I don't try.

That said, I love potato fries, blue potato fires, yam fries, and sweet potato fries, when done well.

Finally, if you care, sweet potatoes > yams nutritionally by a significant degree.

As I said just above:

Finally, if you care, sweet potatoes > yams nutritionally by a significant degree.

From your posted sweet potato wiki:

In 1992, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value. According to these criteria, sweet potatoes earned 184 points, 100 points over the next on the list, the common potato.

its not that hard to make potato fries.

use russet potatoes, keep the oil at 325F and when finished dust with salt, pepper, garlic powder and onion powder for awesomeness.

I always get sweet potato fries when I go somewhere that has them. A lot of times they are kind of soggy/not crisp. Yet regular fries from the same place are. So I'm guessing they need to adjust their cooking methods. But when they actually come out right, they are delicious!
