Toro is AKA "fatty tuna" and there are different grades based on the fat content. There is also a kind of season in that good Toro comes from cold deep water (caught during winter months or none El Nino years) this establishes the fat content, the warmer the water the less fat. Also as with all Sushi the fresher the catch, the better the Sushi. Hope this helps.

maybe confused with sashimi (sah shee mee)?

Remember folks that with the amount of crap in the sea / farmer fish escapes etc, families of worms are quite commonplace in fish, which can be fatal to humans if consumed.
Deep-Freezing fish kills worm eggs. Make sure that the Sashimi/Sushi you're eating has been deep-frozen in transit.
