Surprisingly decent instant meatloaf

I like to encourage people to learn to make their own food and stop relying on frozen, processed crap, and yesterday I was served a not-bad-at-all meatloaf at my mother-out-law's house that anyone can whip up in a few minutes.

So, if you're known for burning water, this is for you:

2 lbs hamburger
1 can tomato sauce (you could use salsa if you want some zing)
1 box of instant stuffing mix (Stove Top, etc)
1 egg
salt & pepper to taste

Just mix these ingredients together in a bowl, form into a loaf, then add to a lightly greased pan and bake for about an hour. Serve with gravy, ketchup, or whatever you like. The stuffing mix has all of the seasonings in it already, and it holds the loaf together really well.

See? You're now Gordon Ramsay.

Never really liked meatloaf. Someone made me one with cheese that was pretty good, but I could go the rest of my life without any.

Nice, I have a similar one like that - basically using ketchup & bread. Just mash it all together & cook, dirt simple, tastes awesome.

Reminds me of my old neighbors - they used to make meatloaf burgers. Bake meatloaf, then grill them a bit in patties. Those burgers were melt-in-your-mouth amazing :wub:

That recipe includes a lot of "processed crap." ;)

Your recipe is (almost) no different than a traditional meatloaf recipe, except instead of oatmeal or normal breadcrumb and a little bit of salt, pepper and a few other typical seasonings, you use a box of stuffing mix. You save exactly 1 step.

That's what I do with leftover meatloaf - meatloaf sandwiches.

Even better is when you have some leftover mac and cheese (the good stuff, not the kraft shit): warm a little bit of the mac and cheese and slap it on top of the meatloaf on the sandwich.

Sounds like the Mac & Jack at my local burger place - they make a white-cheese Macaroni mixed with a bit of Alfredo sauce to make it extra-creamy, then top it with smoked BBQ pulled pork and serve it to you in a mini Dutch oven. It's pretty amazing :eek:

Still trying to wrap my head around that o_O I can see it in a TV-dinner format, but if it was fresh? Oye!

I use a similar recipe but I put in saucy-susan (duck sauce) in mine instead of tomato sauce. I tend to eat it all in one shot and get sick, so I rarely make it.

I felt the same way until I went to a really nice place and they had a duck trio on the menu. Didn't realize one of the items was a duck meatloaf until it came to the table, so I decided to try it anyway.

You can use any meat really. I find people funny that hate meatloaf but love meatballs. It's like saying "I hate round cookies but love square ones!"

Some other variations I've tried:

- Ground pork mixed with sausage meatloaf served with country gravy and eggs
- Turkey meatloaf "frosted" with mashed potatoes (BIG hit!)
- Veal meatloaf (bit too rich)
- Mini-meatloaves made in a cupcake pan (again w/ mashed potato frosting)

Lots of fun stuff :)

I'm picturing the edges getting all gray and crusty while the middle starts to leak pink fat blobs. Would likely look like something out of a horror movie.

Hah, I know, it's just that the image of microwaving a meatloaf suddenly popped into my mind and made me laugh :D Although google reveals some interestingness...
