I was told baking soda and vinegar mixed will work well, do you have any good suggestions?

For stains? I've had good outcomes from Resolve carpet cleaner.

Please video the baking soda/vinegar use if you decide to do that.

I would be careful with vinegar.

Though this happened when my friend and I were in high school and it most likely went very wrong:

He had an old (1980s) Camry and he decided to use vinegar (not sure if it was with baking soda or just vinegar by itself) but it made the car smell horrible for a good couple of weeks. Imagine the stench of vinegar mixed with old car musk that gets baked in the California sun and getting into that.

I discovered that for floor mats using a scrub brush, water, and dawn dish soap works well since most of the stains accumulated on the floor mats would be grease/oil based from shoes in parking lots.

I used this on my beige floor mats for my car and let them sit outside to dry in the sun and they looked a lot better, not brand new by any means but it was a cheap effective way to clean them. You may want to utilize this method before using an actual carpet cleaner... if you go that route.

Use an enzyme based cleaner and use a steam cleaning unit. You spray the area and wait 20 to 30 minutes then, steam clean. Good as new.

Like said use something like resolve for actual stains.

For general cleaning I've had the best luck with laundry detergent. I like using a scrub brush with softer bristles. Use a wet/dry vac on it when you're done then repeat with just straight up hot water. I always try and leave a little soap residue at least on the floor/ floormats or where I know will get dirty and it almost acts like a stain guard. Just test to make sure it doesn't bleed the dye out first.
