I've been using Audiograbber + LAME for the longest time. My friend showed my CDEx tonite, it looked decent, but I've never had a problem with Audiograbber. It's easy to use and lets you control all the naming without much trouble. I've played with EAC too. I'm sure it's rips the most accurate wav's, but it's slow and has a couple other annoyances. So until Audiograbber gives me a problem with quality, I'll stick with that. I'm sure using a Plextor drive helps in the ripping process as well.

LAME... there is no alternative MP3 encoder that can match its quality and tweakability. Plus the huge community behind it where you can argue til the cows come home about which switches are best. For frontends, I like RazorLAME and EAC. EAC is my favorite ripper, and I now use it for encoding with Psytel's AAC encoder.

barf; Xing's encoder butchers the high end. Go with anything LAME based.
