Suggest a dish to bring to a dinner/date party

OK, so I'm going to a BBQ at a friend's house (married couple). There will be 4 people there: husband and wife, girl I'm dating, me. She already called wine/beer (they're picking one), so I need to bring something else, presumably a dish. Any suggestions on what to bring?

Bring something to slap on the BBQ. Short ribs, chicken, etc.... If you want to be creative, bring stuff to make a BBQ pizza.

OK, no potato salad. Sorry, I should have made that clear. I hate potato salad (and anything with mayo, pretty much), so I think it would be ridiculous to bring it. Wouldn't it be?

That and bringing potato salad or chips is just too ordinary.

Stuffed Zucchini Boats

RECIPE INGREDIENTS


4 medium zucchini
1 egg
1 cup chopped fresh spinach
3/4 cup dry bread crumbs
1/2 cup tomato sauce
1/3 cup grated Parmesan cheese
1/3 cup finely chopped onion
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (14 1/2 ounces) diced tomatoes, drained and finely chopped
1 cup (4 ounces) shredded reduced-fat Swiss cheese



RECIPE METHOD


Trim ends of zucchini; place in a steamer basket. In a saucepan, bring 1 in. of water to a boil; add basket. Cover and steam for 5 minutes. When zucchini is cool enough to handle, cut in half lengthwise; scoop out pulp, leaving a 1/4-in. shell. Set pulp aside.


In a bowl, beat the egg; add spinach, bread crumbs, tomato sauce, Parmesan cheese, onion, garlic, salt, pepper and zucchini pulp. Spoon into zucchini shells.


Place in an ungreased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 20 minutes. Top each with tomatoes and Swiss cheese. Bake 5-10 minutes longer or until cheese is melted.

Fruit salad (they come ready-made at the store), baked beans, watermelon, salad, pie, or cookies. All easy to make/buy.

Lots of good suggestions here. Thanks, but keep 'em coming!

BTW, cole slaw is also out. I hate that too. The problem with bringing something I can't stand is that I would have no idea how good or bad it was.

Both of these are good:

Quick Three Bean Salad
1 (8 1/2 oz.) can lima beans
1 (8 oz.) can cut green beans
1 (8 oz.0 can red kidney beans
1 med. onion, thinly sliced and separated into rings
1/2 c. chopped green pepper
8 ounce bottle Italian salad dressing

Drain the canned beans. In a large bowl combine the lima beans, green beans, red kidney beans, onion rings, and green pepper. Pour dressing over vegetables and stir lightly. Cover and chill at least 6 hours or overnight, stirring occasionally. Drain before serving.

Or
BLACK BEAN AND CORN SALAD

1 can black beans
8 1/2 oz. can yellow whole kernel corn
1/4 c. red onion, chopped
1/4 c. red bell pepper, chopped
1/4 c. vinaigrette salad dressing
1 lg. clove garlic, minced
2 tbsp. fresh cilantro, chopped

Rinse beans and corn. Add remaining ingredients and refrigerate.

My contribution :

- Diced 1/4 cantaloupe
- Diced 1 Mango
- Diced 1 red pepper
- Diced 2 cucumbers
- Sour cream 1/2 cup
- Some chopped Dill (Aneth) and cilantro and mint (to taste)
- Black pepper (to taste)
- juice of 1/2 lemon
- No salt until served (salt lets the water come out of the cucumber and makes the dish a mess)

It has to be ice-cold
