Also if this happens it may be a broken motor mount or a defective accelaerator cable, or even a bad engine ground.

And who really cares about some extra wear on the engine in a situation like that? The smartest, and easiest, thing to do is pop it into neutral and slowly pull off the road.

And lock the car up? Like it was said before..put in neutral, steer off the road while braking, then turn the car off.
