Super Street Fighter II was released on SNES, but I'm pretty sure they're playing the PS2 version.

This was at SBO 06, biggest tournament in Japan. To further explain, Daigo's full parry of Chun Li's was cake comapred to this. You can see the super flash beforehand, and when you're really experienced, full parries of supers are incredibly easy. The parrying in that wasn't even the greatest part about that vid, it's the fact that he jumped up to parry the last hit to get the extra j.HK so he could do enough damage to kill Chun Li.

The link I showed a fireball which is 3 hits, during this is parried the Gouki player can choose either to go low, high, normal throw, or command throw from the air. In this sort of situation most of the time you flat out guess what the other guy is going to do, a hell of a lot harder to do than to full parry a super you know is coming.
