Turkey is thawing in the extra refrigerator. Pecan and mesquite wood are soaking in a brewed coffee and tea mix. Wood will begin drying tomorrow with excess coffee/tea mix being refrigerated until Wednesday night when the smoker is fired up.
 
That's the first I have heard of soaking the wood in coffee/tea. What kind of smoker? I use a WSM, but haven't been brave enough to throw a whole turkey on yet.....
 
Smoking turkey? Dang thats a lot of work but it probably comes out amazing. I'm deep frying our turkey this year. Fast, delicious, and awesome.
 
I was practicing my sugar work last night, it's not going well.

I am trying to make something to set my apple pie apart for the contest (family) this year. It's already going to have homemade caramel sauce but I wanted some sugar for presentation.
