Does removing and creating partitions and formatting multiple times hurt the SSD? I'm having a nightmare issue with my build and have had to remove partitions and reformat at least a dozen times or more... That can't be good?

Not at all, as long as you use quickformat. (Windows format etc is quickformat per default.)
