EDIT:

check the time on the oven. no after pics because it's not cooked yet. waiting for the oven to warm up.

Also, I realized the oven was too low. changed to 500 degrees+

NOO!!! I fscked it up! 60 seconds, flipped it, waited 30 seconds, stuck it in oven. This is a 1inch steak, so 1/2 of the time in the oven.. and it's RAW on the inside ! Okay stuck it back in the oven... we'll see......

ok. I think it's the cheap cut of meat - it's pretty tough. publix didn't have any filet, and I didn't want ribeye. It tastes good though - although I think I liked grilled steaks better. Will try again with different meat some other day.

well, the steak is still raw. so yeah, there will be after pics. about 5 more min until i know the skillet is as hot as the oven.

Seriously, how do you mess up a simple thing like this? :roll:

Oh well, at least you didn't overcook it...and it's a cheap cut of beef so even if you do it's not that big a deal.

The steaks I buy are $25/lb choice cuts of filet mignon. I'd freaking cry if I overcooked one of those.

lol... i too am cooking some steak in my cast iron at the moment giving spidey's method a try. mine worked out as planned though. i was surprised there wasn't more smoke when i seared it.

i have the same lodge cast iron as in your pics.

That think is gonna cook QUICK.

probably 2 minutes per side max once it goes in the oven.

your choice. I don't flip it.

I also use a digital meat thermometer to the middle of the meat. The temp will raise very quickly and the difference between rare and medium well is like 90 seconds.

Thanks for the steak tip. Now I need to find a good skillet.

(need to cover that smoke detector right next to the kitchen though)

Olive oil burns at a low temp. Use corn oil.

Heh. Didn't Alton Brown publicize this method on his show awhile back?

I do something similar and a bit faster, though... I heat up a skillet for about 3 minutes with the big gas burner on my stove, and then throw the steak on it and let it sear about a minute on each side. Then I put the skillet in the oven which I preheat to 400 degrees, and let it cook for another 10 to 12 minutes. Bingo... Perfect medium rare steak goodness! :)
