Soup or Stew?

I like soup, but only love it if it is REALLY good. I prefer chilled soups. Some of my favorites (not typical gazpacho) are: Chilled Mango with ginger; Spicy avacado; watermelon gazpacho.
For hot soups: I love a good lobster bisque, a rich French Onion or Italian Wedding Soup.

I make a mean Italian Wedding Soup. I make the meatballs the night before while boiling the chicken stock, then chill it overnight so all the fat coagulates on top and it can be peeled off. It's also important that you don't add too much spinach, or it'll get bitter. My big secret is to add your parmesan cheese to the meatballs instead of to the soup directly. Otherwise the cheese can scorch on the bottom of the pot.

It's a special soup for us because our first baby came with 18 hrs hard labor, and after the delivery we hadn't eaten in nearly 30 hours. The hospital cafeteria had wedding soup, so we ate like 4 bowls of it 🙂 Best soup ever heheh.

Still plenty o meat on that bone. You take this home, throw it in a pot, add some broth, a potato... baby you got a stew goin!
