I don't think you would ever see anything along the lines of cutting a helpless screaming animal's throat infront of countless individuals in the U.S or Canada (me), even if it was a tradition of some form or another way back when, people now a days would be horrified and would bring a stop to it immediately. This isn't a popular thing in Taiwan, just a small bunch of fvcked up people from the countryside doing it. Please don't make dumb generalizations on how this tiny group reflects the general populace of Taiwan. Afterall, there's quite a few strange groups here in the states also.

The ritual is disgusting. I am not saying the people themselves are horrible, I just do not understand how they find enjoyment in this.

Why would this kind of behavior in the East surprise anyone? Has everyone forgotten (actually most just deny it ever happened) the way American POWs were treated by the Japanese, Koreans, and Vietnamese? So I guess since it is history the barbarism of these cultures is forgiven. Nothing that I read about that part of the world surprises me, it may disgust me but it never surprises me.
