Software to monitor and log an installation.

I want to be able to monitor a program as it installs for any changes like files and registry entries an be able to install that specific program and undo all its changes at any time, even if the install failed.

A long time ago I had Norton Install which did this but it was a long time ago and was slow and buggy but it worked much better then any default program install.

the programs that I see online and System restore only check the system state to see what changed but that only works if I make no other changes. I am looking for something to monitor an active install as it is going.
