Nothing really reliable because so much software does it's own installation routine. Depending on how thorough you want to be you can rely on the Add/Remove Programs list and created date on each program's directory.
One would assume that any software designed to be hidden wouldn't use the normal software installation facilities. You need something like tripwire or aide to verify and report on any filesystem changes periodically.
