Socket 754 - 2x512meg or 1x1gig

It's hard to say. You may pay more for the 1GB DIMM, and typically they don't have the best timings, but that's not an issue really for an A64. If you plan on upgrading past 1GB, I guess it's better to have a slot left open, otherwise, 2 512's is probably cheaper and better.
 
There is an electrical advantage in having fewer RAM chips on the bus, paying off as you add more in the future. However, with 512-Mbit chips currently being more expensive than twice as many 256-Mbit chips, you'll pay more for slower chips.
