Rogue or Priest is probably your best bet. I think I've had the most fun playing my Rogue in PVP, although the best thing is how much more long you can live while in combat as a Priest compared to a Rogue. Especially when it comes to multiple people, it's much easier to just heal yourself as a priest. But there's nothing more fun than killifying people without them being able to even fight back.
I haven't specced my priest yet, but I'm thinking about going full Discipline instead of being Shadow. Shadow really got a lame 41 point talent. The amount of mana isn't high that it returns and the damage isn't that great for how much mana it costs. It just adds to the overall DPS.

The economic aspect of it. I liked acting as a broker, buying and reselling goods, channeling goods via the various cross faction auction houses, 5-man party PvE (i did not like raids) and Battlegrounds.
I was a lvl 60 priest on the horde side, rolling dwarf priest next time I think, if I can get my RL friends back into the game (we quit at the same time).

i dunno, healing yourself in pvp is almost worthless. now as a priest, it might be easier since you have the shield spell and prevents interruptions. usually i'm getting pounded by too many enemies or maybe i just wait too long to try to heal. i can never heal my self for anything significant as a shaman.
