Windows Explorer + tagging when I rip. ;)
For stuff that wasn't properly tagged, I've used MediaMonkey. Its interface is only intuitive to monkeys with severe mental problems, but it does do what I need, and it supports FLAC files.

Desktop > Music > Artist Name > Disc Title > Track Titles
and I use Winamp to play it with. Unfortunately I don't understand a lot of the finer points of Winamp (just haven't gotten around to playing with all of it), but I can work the equalizer plus make and edit playlists and MP3 tags, which is enough for now.

edit: I don't do iTunes. It has always irritated me, starting with the time I couldn't get the music I just bought from their store to play with any other player.

Foobar with Artist, Album, Genre browser.

My music is also organized in Genre, Artist, Album. And Foobar has a really nice quicksearch; it goes through song titles and artists of my 80gb collection in about 3 seconds.

I've tried Songbird, MediaMonkey, and Winamp but the lack of multiple artist tagging in each was a dealbreaker for me even though I really liked all three otherwise.

Itunes. Really I don't see why so many people dislike it. You can't do as many things with it as you can with winamp or some others but for ease of use it's hard to beat. Make sure to get your media from sources OTHER than the itunes store though.

I used to use winamp and picard to tag.

i no longer have an mp3 player, so i just use WMP 10?

Am I the first one to say VLC?

Usually folders and VLC but sometimes I will make plyalists.

I used itunes for the past five years, but recently switched back to winamp. Itunes had laggy scrolling and terrible search.. I really missed the "j" search shortcut in winamp.

Folders by band - album (or multiple albums in one band folder).
Off and on between Zune and Winamp. The new update for Zune has me back to it after sticking to Winamp for awhile after growing bored with the Zune software.

iTunes, although when im playing games and have music in the background I use winamp. iTunes is too much of a resource hog.

Whenever I want to listen to one of my MP3's, I have a vinyl press onto which I arrange a playlist, and then after it finishes I can play the freshly pressed record on my turntable.

Oh, and I use windows explorer to organize my music... autobiographically.

That's cool. I arrange mine alphabetically...by the first letter of the name of the animal/character recognized as the mascot of the percussionist's second born child's favorite sports team.
