As others have said, Indian food is probably the best example of vegetarian. I eat curry with dahl (usually a tomato, mango, spinach or dosakaya) at least 5 days a week, and it's really, really good. You can mix it up by adding a chapati/roti and it's almost like a sandwich. I actually like to chop the vegetables really thin, add lentils and make almost a paste. I take that paste, add some plain yogurt and roll it in a chapati. Quite good.

Yes! If you find a good Indian restaurant, then you'll have some great food. I'm a meat (med rare to rare) and potatoes guy but this Indian restaurant I went to with a friend had the best. It was a buffet too which even better. My friend was a religious vegetarian too and I had everything he had and got seconds on most of it.
