Discussion So how do you like your cornbread?

Been getting cravings for cornbread which I haven't fixed for some years now and I still have the cupcake pan I used to bake them with. I used to buy Jiffy's corn muffin mix that all you do is add milk, an egg, and water. I have added vanilla extract to the mix as well and came out real nice tasting.

So who still partakes of cornbread and how often?

Medium or coarse grind cornmeal and lots of it, flour, melted butter, egg, salt, baking powder, milk. Let sit for a while for the baking powder to do its thing.

Serve hot with butter and dark Karo syrup or honey.

No fans of sweet cornbread? I like adding roasted whole corn, chiles, bacon, sun dried tomatoes or, fresh herbs. Cornbread makes a great starch option.

Not really a fan. I'll usually eat it if it's served, but otherwise...we rarely make it at home.

What is Karo syrup anyway? Is this a Southern thing? I don't recall ever seeing any up here in Illinois at any stores I've been in.

What? Karo syrup is everywhere.
They make a light version and a dark version.

Light sucks. Dark, or go the fuck home.

Karo is simply corn syrup. A ghetto maple, but is a nice change of pace on occasion.

It's corn syrup. Pretty much every grocery store has it, can be found in the baking aisle.

In cast iron pan with jalapeño bits and some corn too. Nothing sweet, just salted butter

I like mine with hookers and blow.

Otherwise, I prefer cornmeal mix with buttermilk, and 1 egg...not a big fan of sugar in it.

I like mixing corn flour in with pancake mix. Crisps up nice, and makes them less cakey.
