slower dual processors versus faster single

is it better to have slower dual processors or a faster single processor for running applications like photoshop or adobe premiere? Would it be better to have a single P4 2.66 or dual Xeon 2.0 processors?

but with 2 cpus, for smp capable apps, you can go like have one cpu do one app, and have the ohter do the other app?

For the cost of a dual 2GH Xeon, couldn't you just go for a 3Ghz P4 with HT which would kill a dual 2GHz Xeon system? (and probably still be cheaper?)
