I assume that I can run a single SATA HD without a RAID setup. Is this correct? Similar to IDE but with SATA. Also, with a RAID 0, can I run more than two?

Yes and yes. SATA is just another HDD interface technology, like IDE SCSI etc. Yes I know the other techs can be used for other things as well, but HDD are their "main" use

SATA uses 1 connection per device, you can run as many sata devices as you have sata connections on your mobo.

it depends on your mobo, some boards have 4 sata ports, while some have 2. dont know if you can do more than 2, the extra 2 might be for raid0+1 i know you can have a large raid5 array.
