That's a beautiful passage. It's a shame that so many would interpet it as an excuse to avoid learning about their world, or thinking critically, or accepting obvious realities.
The hardest part to swallow with the Bible's creation theory is that there are tons of other religions that have different explanations.
While popular science theories probably only have a handful of explanations.
Like a true statistics nerd I'll take the school of explanation with less variance.

Most of what we go by with scientific "understanding" is a theory. Technically, electricity is a theory for example. Many things we use in every day life all the time are nothng but practical examples based off a theory that has never been 100% proven (thus making it not a theory anymore) or disproven either.
I'm taking it you read the recent issue of National Geographic where they had a big long article in it talking about Darwin and the Evolution theory? Which they pointed out was not a theory he came up with first, he just had more scientific evidence and observations to draw that conclusion and was able to put it into a clear and concise book. One he didn't want to publish because of his wife being someone who didn't beleive in his work.
Anyhow, yes it is a theory. It's a damn good one too. There are different parts to it and people take what they want to beleive out of it, including the Roman Catholic Church. Which is that evolution exists as a set of laws defined by God for the governing and creation of life with specific injections of life, such as humans, who were placed on the earth at a specific time frame for a reason. Least that's how the church accepts evolutions as a theory. There's just oo much scientifici evidence to dismiss the theory out of hand without any theory to replace all the facts that are out there.

The error in your logic is assuming that the fault of bible thumpers lies in the logic of their thought process when in reality the true fault lies in their method of spreading their ideology. A method which you seem to follow exactly.... thus in your attempt to criticize an ideology, you have in actuality subscribed to it.

Actually, your purple omnipotent and omniscient dinosaur is actually just Him in disguise. If you take a look at the website, it explains all that in the FAQ:
