So....I ride my bike a lot. As such, I go through a lot of Gatorade and Clif Bars. These things are generally about $2 if you grab one from the local bike shop and no cheaper than $1 each if you dig around online. I figured they couldn't be all that complicated, so I went online to find out what's in these things.

From the Clifbar.com website; the ingredients for Apricot bars (my fave).

Ingredients: Organic Brown Rice Syrup, Organic Rolled Oats, ClifPro (Soy Rice Crisps [Soy Protein Isolate, Rice Flour, Malt Extract], Organic Soy Flour, Organic Roasted Soybeans), Organic Evaporated Cane Juice, Dried Apricots (Sulfured), ClifCrunch (Apple Fiber, Oat Fiber, Organic Milled Flaxseed, Chicory Extract, Psyllium), Organic Dried Apples, Fig Paste, Natural Flavors, Citric Acid, Colored With Annatto.

Okay, so I don't have a lot of the nitpicky ingredients like "soy protein isolate", but I figured I could basically wing it with whatever was in the kitchen and probably not poison myself. Here's what I did.

Ingredients for Fausto-Snax©:

[*]Apricots and raisins (chopped tiny in a Cuisinart)

[*]Organic unbleached flour

[*]Organic rice flour

[*]Molasses

[*]Honey

[*]Grapeseed oil

[*]Rolled oats

[*]Rice crispies

[*]Whey protein powder

I put the fruit, oats, flour, crispies, protein powder and about a 1/4 cup of the oil in a bowl. I then added molasses and honey (in about a 3:1 ratio) to the stuff while stirring with an electric hand mixer (you'll want to use the beaters for bread dough as this stuff gets damn sticky) until everything was sticking together nicely and I couldn't detect and dry flour or oats. I then formed the goop into a bunch of small patties (about 3" diameter, 1cm thick) and stuck them in the oven at 350F until the tops started to brown a bit. They're a tad chewy, but really not bad at all for a first effort. I'll play around with the ingredients and post an "official" recipe with amounts of each ingredient if I can improve upon last nights bars.

Note: the bars are mostly comprised of the fruit and oats. I really only added enough flour to give them some body where they'd hold together once cooked. You'll have to mess around with the proportions as I just eyeballed everything. :)

You could use these recipes as a base:

Make Your Own Energy Bars

It appears to me that your recipe has no leavening. Baking powder, soda or yeast. That's why they're chewy and will probably get pretty hard in a couple of days.

Cheers.

So what's the leavening agent in the Clif bars? The malt extract?

It doesn't appear to have any either. On review of the link I posted the second recipe they have doesn't have any leavening either.

I'm just going by the standard for cookies and baked goods. the only reason to not use leavening is if you want a crisp or cracker, I guess the ingredients are chewy enough and have enough oil to not need it.

We should both be working on important projects RIGHT NOW. :)

Do your bars still taste like someone who ate a dozen apricots, sh!t them out, formed them with 1200lbs of pressure, and baked them, like the mass market ones do?

Well, I tried to make them taste like Clif bars since they're the only bar on the market that's even remotely palatable in my opinion. If you don't like them, you won't like these, sorry.

Meh, Cliff bars. I prefer Powerbars, to be honest, and always have. Maybe I should try the apricot flavor?

So, Fausto, soy protein isolate is available in stores. There's this supermarket chain called "Whole Foods" which has it in powder form. I imagine most health-food stores would have it too.

Sounds good!

But I would recommend getting away from the gatorade. That stuff is terrible for you. You might as well just drink soda. Did you ever notice at football games how they have those big coolers that say gatorade on them? Do you know what's in those? Water. just FYI

PLEASE don't do this. I have stock in the energy bar industry. I am expecting 2004 to be a big year with all the active health conscious people buying up the goods.

My college cycling team was sponsored by PowerBar, so I kinda burned out on them. The Clif is more like a cookie IMO, so I prefer them.

Yup, we have a few Whole Foods here in town. I just didn't bother to go get all the other crap as I'm lazy. I figured I'd experiment with what I had on hand first and go from there. I was just eating apricots or figs on longer rides, but I found out that's not a great idea if your ride is 4+ hours and you're going through a pound of them at a time. <<insert ColonBlow joke here>> I needed something else to eat on long rides, but didn't want to pay for Clif bars, so I thought I'd make my own.

Sounds interesting. I will go to Whole Food during lunch and see what they have. I am interested in sampling one if anyone is willing to ship.

Good for slow training rides, but try eating one in the middle of a race or fast ride with your HR at 70-90% of max. All the fat and nuts will have you barfing inside of five minutes. ;)

These are for when I'm out riding. Shakes are for when I get home. ;)
