The site will be for my freelance programming 'business' (it's just me), hosting some personal projects, and maybe the odd blog entry. Would you think less of someone you're looking to hire if you went to their site and it had some ridiculous domain? Would you think they were more professional if it was thier real name in the address bar?

I think their real name is much more professional. It suggests they are proud and secure enough of the site content to attach it to their real name.

I would NOT mix business and personal however. Either make a professional business site with your name and have a "fun" domain for personal projects, OR have personal stuff on your name site, and professional stuff on a second site with a professional-sounding domain.

I kinda want to show off my projects to potential employers, but I guess I could link to the 'fun' domain from the business domain.

You think I should just have my name and contact details? And maybe a description of previous work or a link to my CV, nice and simple...

So long as the projects are professional looking, it should be fine to include them on the business domain. But I would not include a random blog about your life on there.

Seriously though, I'm not posting my last name, but my first name is John. The last name is not particularly easy to remember, but it's not hard to spell at all.
