Planning to build my first PC in the next 2 weeks. So I bought a g.skill ripjaws 16 gb (8x2) 3200mhz and currently have it in hand, still unopened. Plan to play PC games on it and trying to get a little more fps. And I was just looking at youtube for comparisons between 3200 and 3600. and it seems like the 3600 is anywhere from 5-12 fps better than the 3200 version. So I'm wondering if I should have just gone with the G.Skill ripjaws 16gb 3600 instead. Its just for $15 more.

I currently have 3070 FE gpu, AMD 3600 cpu (plan to sell the 3600 once I can get my hands on the amd 5600x or 5900x)

Assuming the latency CL number is 16 or less it is totally worth the $15.
This does come with the warning faster memory works better but not that much better. More is always better than faster.
Personally I’d think about 32GB

You can do a DRAM calculator test and check the latency and how it's effected by the timings. Faster speed with tighter timings is always better. Also Ryzen likes 256bit memory path so if you are running b-die 8GB sticks (2x8) each stick is 64bit memory interface for a total of 128bit. Recent reviews suggest 256bit will increase fps ~ 1-10%? don't quote me.. seen a review from GN talking about this..
