I just ate some beef-stick slim-jim type things. I later remembered I bought them in February... will I die?

Meat snacks, aka preservative sticks will be around with the twinkies and cockroaches when the world ends.

YES, you will die, but not from eating that highly preserved meat snack crap.

As stated in other words in earlier posts, it will last for your grandkids grandkids.

Good jerky bits like Tillamook do have a best-by date and should be eaten within about a week of breaking the seal.

Processed animal sweeping sticks will still be edible when the sun becomes a red giant and burns away all life on Earth.

How does Pemmican compare to the rest of this snack category? I like Pemmican!
