My friend and his wife are coming over tonight and we're thinking of cooking burgers. Any out there have any good burger recipes they use often and stand by?

Here's what I've been doing lately:

Form beef into 1/4 lb patties, sprinkle with salt, pepper, and olive oil.

Cook on grill or skillet at medium high heat with oil side up until each side is brown. Cook to desired redness.

Dribble olive oil onto hab buns and toast on skillet or grill.

Take a whole, yellow onion and cut about 1/4" thick slices of onion. Place on skillet, dribble with olive oil, and brown each side.

Top with lettuce, tomato, provolone cheese, and other desired toppings.

This is pretty generic, and not altogether dissimilar from what you posted, but:

1 pound ground beef
1 egg
chopped onions
chopped green pepper
minced garlic
generous worcestershire
other seasonings - I like cayenne, pepper, etc
combine all together, make patties, then grill and serve on toasted buns

I made puttanesca for the first time the other night, and I've been kinda itching to try anchovies + EVOO + garlic + onions all sauteed together, then added to ground beef to make patties. I was amazed that anchovies dissolve entirely when fried in oil, and that the added taste is subtle but awesome. Not to mention that worcestershire has anchovies too, so something must be right about them.

Biggest problem people make is putting them into patties and beating the snot out of them or mixing stuff.

Just take the beef out of the container, it should already have the correct thickness.
Cut your burgers, you should not be touching or forming them
Make depression in center with thumb.
Salt/pepper
Grill or pan fry turning only once.

I'm surprised not many experiment with their burgers.

I go nuts trying different things. Another favorite of mine is a touch of cayenne pepper, diced garlic, and topped off with muenster cheese and a giant, cooked portobella mushroom.

The onion mix recipe sounds good. I'll give that a try soon.

I buy meat in bulk often, so it doesn't come in the right thickness. I just take about 1/4 lb and flatten it into a circle.

when i grill i make it into a ball. then flatten into a about 1/3 inch patty then put a dent in the middle. put some salt and pepper on it and throw on the grill.

its easy and yummy.


but sometimes its good to experment. some garlic, cayenne pepper is great every now and then.

Your mother's ****** is like this or fatter.

And there's a big split in the middle
and grease is popping out.

You're looking at it while it's popping.

You're looking at the grease
in the pan and thinking:

"That don't look like no McDonald's."

Then your mother say, "Go inside
the refrigerator and get me the bread
out of the bread box." And you go
look in the bread box and you say:

"Ma, we don't have
no hamburger buns.

"All we have is Wonder Bread."

"That's what I said. Get the bread
out of the bread box."

"You gonna put it
on square Wonder Bread?"

"Bread is bread. Bring me
that bread before I slap you.

At McDonald's, they use buns,

And you try to put some ketchup on it
and it mixes with the grease,
turn the bread into pink dough.

in the dough.
You stand there looking at it and you
try to make it look like McDonald's
so you rip the edges off around it,
make it round.
And you got green peppers and
grease running down your hand.

And your mother say,
"Now, go on outside and play."

And the other kids got McDonald's.
They outside going,
"We got McDonald's hamburgers.

"McDonald's. McDonald's.

"I got McDonald's."

And you standing there
with this big "house burger".

And kids are honest.
They say, "Where you get that
big, welfare, green-pepper burger?
"

1 tablespoon liquid smoke
a bit of montreal steak seasoning

Pop em on the grill for a bit - makes two delicious burgers

find a local meat (butcher). i buy bundles of beef all the time. they have a beef bundle #1 wich is 14 ribeyes, 4 roast, 10lbs of hamburger adn 14 lbs of top serlion for $200. They also have a hamburger bundle. Where its $2 a pound if you get more then 20 lbs.

its far better then any store baught crap also.

wow how is it? seems like it would be way to dry and not as flavorfull.

I like to buy some sale steaks and get the butcher to grind um up fresh with about half a pack of bacon. Put some dales or soy sauce up in the meat if your feeling spunky. Or some Paul P's blackening seasoning seared on the outside. I cook them in a IRON Skillet, letting them simmer in its own juices. Giant hunk of sharp cheddar cheese thrown on when they are almost done with a slew of fresh potatoes, put through a food processor and fried up hot and salty. Umm, Now I've gotta go to the grocery store.

I use ~85% chuck or loin... too lean of a beef ground is no good

Pull out .5lb clump, spread it out, mix in minced onions (some use celery), pinch of salt & pepper, few squirts of Worcesterchire, few squirts of Tabasco. sear on Cast iron and then finish in the Broiler.

tastes plenty good for me.

There's lots of good ways to make a burger. I do not agree with Spidey 07. You need to mix seasoning into the burger for superior flavoring. That does not mean you need to over cook the meat.

Mix in salt, lots of black pepper, onion powder or finely chopped fresh onions, garlic powder or minced garlic. Quantities are dependent on your preferences.

The best way to cook, in this order, is to 1. bbq 2. broil 3. fry in a skillet The easy way to cook a burger is in Corning ware in the microwave. Make sure you have a lid on the dishware, and cook the burger about 3-4 minutes. I will come out rare and juicy.

Always toast your hamburger bun. You're better off with a gourmet type bun then the processed small round ones.

Best toppings are thick sliced onion, tomato, pickles, jalepenos. Condiments depend on the person, I can't say any are better or worse, right or wrong.
