I am always looking for good easy recipes to cook for my family. So, I will share one that I have been making lately.


Name: Chicken broccoli alfredo

Ingredients: boneless chicken breast, stalk of brocolli, heavy whipping cream, parmesian cheese, fettuccini noodles

Instructions: I like to cut up the chicken in small pieces and cook them in a frying pan on low with just water. Boil the fettuccini noodles. Cook the broccoli until a little soft. Heat the whipping cream in a pan until it starts to bubble and then start adding parmesian cheese until it thickens up a little (stir frequently). Then put the heat on low and add the broccoli, chicken, and noodles to the pan with the whipping cream and let simmer.

Outback-like steak

TRY THIS BEFORE YOU SAY YUCK!!!

lay the steaks in a bowl or in a ziplock bag
rub in 1 package of italian season dressing mix (the dry stuff)
rub in 1/2 package of taco seasoning mix
marinate with 1 can of coke-a-cola (NOT PEPSI) for 1 hour
grill to your preference

Enjoy THE most juicy, tasty steak you've ever had!!!!

Potato Salad.
Quantities depend entirely on personal preference.

Cook potatoes until they are just tender, allow to cool.
Chop up 2-3 spring onions and one red bell pepper.
Mix together equal quantities of sour cream and mayonnaise and add curry powder to taste.
When the potatoes are cold dice and add dressing, peppers and spring onions.

Mango/Papaya/Coconut Kabobs

2 lbs Cubed Beef or Pork
1 Coconut
1 Papaya (or substitute equal amount of Papya juice or Papain extract)
1 Mango
Black Pepper
Tabasco
2 Portabello Mushrooms
1 Package Cherry or Grape Tomatoes
2 Peppers, Red Green or Yellow
1 Purple Onion
Kabob Skewers (about a dozen)
BBQ Grill

Drain juice from coconut, whole papaya, and half the mango into a large bowl. Add some fresh black pepper and a little Tabasco. This is your marinade. Throw the meat in, and marinate in the fridge for an hour or so (while the grill gets hot). You won't need meat tenderizer because the papain in the papaya is one of the world's best meat tenderizers.

While the meat is marinating, cut all of the vegetables into small pieces (don't forget the other half of the mango you have). Put the veggies and meat onto the skewers, with the mango pieces next to the meat.

Throw em on the grill for about 10 minutes, or until the meat is cooked to your liking.

Shred the coconut meat and throw it on top of the kabobs before serving.

Serves 4-6. Goes really well with saffron rice.

EDIT: mmm...sounds like it would go REALLY well with Kassy's potato salad! :)

Name: Barf omlette with cheese

Ingredients: 4 eggs and any type of cheese you like.

Instructions: Eat all for eggs raw and then the cheese. Jump around for 3 min. then puke it back into a pan. Proceed to cook until finished.

Werk, I agree, I will have to try your recipe, it sounds YUMMY !!

Another favourite in our house is Sherry Trifle, this is the US version of an old English recipe.

Sherry Trifle
1 jam roll
1 package strawberry Jell-O gelatin dessert
1/2 cup sherry wine
1 can fruit cocktail, drained
bird's custard (follow instructions on the box)
1 cup whipping cream, whipped
colored sprinkles

1. Slice jam Roll and place in trifel bowl.
2. Make jello following directions on package and replace 1/2 cup of cold water with the 1/2 cup of sherry.
3. Pour fruit cocktail over jam roll, then cover with jello.
4. Put in fridge to set.
5. Make up Custard and pour ontop of jello when it is set.
6. Then top with Whipped Cream and sprinkle with sugar sprinkles, keep in fridge till ready to serve.

I have a great Sangria recipe somewhere but for now,

Ice Water
8 ounces Water (your choice)
2 cubes Ice (you choice of shape)
1 large glass

Combine water and ice in glass. Serves 1

So thats why I could never make Iced Water correctly, I kept forgetting the 2 icecubes !!

This one is well the effort.

Lasagna Rollups with Bechamel Sauce.

12 to 15 lasagna noodles
1 1/2 to 2 lbs beef, ground -- or use 1/2 beef and 1/2 pork
1 package Betty Crockers hamburger helper -- or any mix of meat loaf seasonings and bread crumbs
1 jar spaghetti sauce -- I use garlic and onion
1 cup parmesan cheese, shredded -- not the kind in the can

SAUCE
1 bay leaf
3 cups light cream or milk -- or a combination
1/3 cup butter -- 5 1/2 Tbsp
2 teaspoons instant chicken broth
1/3 teaspoon pepper
1 teaspoon salt
1 dash nutmeg

1. Preheat oven to 350.
2. Cook noodles in salted, boiling water until just tender. Drain and place in large bowl of cold water and drain on paper towels.
3. Cook ground meat in microwave until done. Mix cooked meat and breading mix from meatloaf mixture until well blended.
4. Spread meat mixture in thin layer on noodles and roll up jelly roll fashion (don't roll too tightly).
5. Spread all of sauce over bottom of 9/13 baking dish and arrange roll ups, seam side down on sauce.
6. Cover with foil and bake 30 minutes at 350*.
7. Meanwhile, scald milk and bayleaf (I use microwave). Let stand 5 minutes and remove leaf.
8. Melt butter in medium sauce pan, stir in flour, and cook stirring constantly with wooded spoon until mixture bubbles.
9. Stir in scalded milk, instant chicken broth, salt, pepper and nutmeg.
10. Continue cooking and stirring until sauce thickens and bubbles (about 3 minutes), and remove from stove.
11. After rollups have baked 30 minutes, remove foil and spoon bechamel sauce over top and sprinkle with parmesan cheese.
12. Bake 10 minutes more or until bubbly hot and sauce is golden.

Rolled Meat Loaf

Ingredients
1LB of Hamburger
2 eggs
bread crumbs or crackers
season with whatever
whatever you want to stuff it with; cheese, broccolli, mushrooms........



Directions
mix burger, eggs, crackers, and seasoning in a bowl.
Then, on a sheet of wax paper
make a square patty as wide as your meat loaf pan, about 1/2 thick
put cheese, shrooms, broccoli (or whatever you want) on top of patty
pick up one end or wax paper and start rolling meat into a log
cap off the ends by pulling burger over it
place in loaf pan, seam down
bake for 1 hour at 350
pull out of oven and let stand for 10 minutes
cut it straight up and down into pattys
you will have a spiral of whatever you stuffed it with
makes great sandwiches too!

Honey Mustard Chicken

1/3 c dijon mustard
1/3 c honey
2 tbsp chopped dill(or 1tbsp dried dill)
1 tsp grated orange peel
1 chicken, quartered

Preheated oven 400 F

-Combine mustard & honey in a bowl then stir in dill and orange peel.
-line baking sheet with foil; place chicken skin side down. Brush sauce on top of chicken, coating well.
-turn chicken oer and pull back skin and brush meat with sauce, then pull skin back over.
-Brush outer skin with remaining sauce then bake until juices run clear when thickest portion of meat is pierced with a knife.

Cooking time may vary according to ovens!

Enjoy, guys. This is a really simple yummy way to cook chicken.

MrBond's Teriaki Steak Stir Fry

1-2 lbs steak, slightly unthawed (important)
1/2 to 3/4 bottle "Veri Veri Teriaki Marinade" (best marinade for this, others will work)
1 pkg Stir Fry veggies of your choice
(I like broccoli, peas, water chestnut, mushroom, pepper blend)
Rice (6 servings work best, adjust for amount of steak)

The day before:

Slightly unthaw the steak. It's much easier to cut into strips if it's still a bit frozen. Cut that steak into bite sized strips about 1-1.5 in long. Trim the fat off to make it a "heart healthy dish" Put it all in a container, and pour the marinade overtop. The container should be big enough that the steak is covered mostly. I usually use a 9x9 baking dish. Cover it with plastic wrap, and let sit overnight. 24hrs isn't too long, and its how long I usually let it go.

The day of:

Unthaw the veggies. I like to precook them before adding them to the steak, but that's personal preference. Put the steak in a wok with a little olive oil, and let it cook, usually on high for 5 minutes, then medium for the remainder till the veggies are added. Transfer some of the marinade juice into the wok with the steak, but don't disgaurd the rest. Start the rice cooking as well (however the box says). When the steak is nearly finished, add the veggies and cover the wok. Let cook for an additional 5-10 minutes. I usually turn the heat as low as it goes now. Take out the steak/veggie mixture, but leave the "juice" in the wok. Add more of the marinade mixture, but remember, the more you add, the longer it needs to cook (to be safe). Add corn starch + water mixture (like making gravy) to the juice to thicken it. Pour over the steak and veggies. Serve over rice.

Not to complicated. Makes excellent leftovers too :D

Chicken Parmesian (or how poor college guys do italian)

4 Boneless, skinless chicken breasts
2 Eggs
1 bottle spaghetti sauce.
1 package motzarella cheese, shredded
One container Italian bred crumbs (regular bread crumbs with seasoning, basically)
Grated Parmasean cheese
Pasta (your choice)

Preheat oven to 350. Beat the two eggs, and then dip the chicken breasts in it, then in the bread crumbs. Place on lightly greased (Pam) baking sheet. Bake for 40 minutes. Pour 1/2 of the sauce into a baking disk (I use a 9x9 again), add the baked chicken. Sprinkle 1/2 the cheese over the top, some of the parmesean cheese, and then add the rest of the sauce. Put the remaining cheese on the top, sprinkle with the parmesean. Bake for an additional 20 minutes. Start the pasta. Serve the chicken with the pasta.

A fairly cheap meal, I bought everything to serve 4 of us for ~$10. Gotta love generic cheese, cause the kraft stuff is expensive...
