Setting up NAS on OSX, and backing up data on XP vs. OSX?

I'm planning on setting up my Intel Mac Mini + an external HD as a NAS device. In XP, I'd just just have to assign it a drive letter. How would I do this in OSX?

I have some valuable data on the external HD that I want backed up to my Mac Mini hard drive. What OS is better for this purpose? I just want to back up a few folders, not the whole drive. What specific apps can do this?

Just mount the volume like you would any other network share, NAS is really just a fancy name for fileserver.
