If I have two serial ATA drives, can I still use both IDE channels? I have 3 optical drives and need 2 HD's

You could have 4 IDE devices and 4 SATA devices w/ this motherboard. It's no problem.

Have you tried it? The manual says that if I have drives on serial 1 & 2, IDE 1 is disabled. Is that wrong? Or did I misunderstand it? I just don't want to but drives unless I know it'll work.
One more question, will my system be noticelbly faster with serial ATA drives compaired to IDE?

It will work. I have 2 sata drives, 2IDE drives ,a Cdrw/dvd and a DVDrw on an IC7-g. Serial ata drives are no faster than IDE drives.
