Heheh...yeah...the ones I made 🙂

Here's an easy side dish I made up that's pretty impressive:

2 lbs shredded potatoes (fresh- frozen sucks)
1 can cream of chicken soup (or 1 cup chix broth + 1/2 cup milk based rue)
1 pt sour cream
3/4 cup melted butter
12 oz shredded cheese (sharp cheddar or cheddar/monterey jack mix works best)
1/2 cup mashed corn flakes
1/2 cup minced onion
1/2 cup mashed corn flakes
1 tbs salt
1/2 tsp pepper
1/4 tsb red pepper (optional- if you want some kick)

Put corn flakes aside. Mix potatoes, 1/2 cup butter, and all rest of ingredients, pour into cassserole dish. Add remaining butter to corn flakes, mix, and cover potatoes. Cover and bake at 350 for 60-90 minutes. During last 10 or so minutes, turn oven on broil and remove cover to crisp up the corn flakes.

Garnish with chives or green onion sprigs. Goes good with ham and pork dishes (chicken too 🙂 ).

I specialize in unusual recipes using simple ingredients. If anyone needs any advice, let me know.

Just curious, how would any of that not be from scratch? Or when you mean from scratch, you actually mean going out back and killing and butchering chickens, pigs, cows, or lambs? If that's the case, :thumbsup:, you got a keeper.
