Depends on what you do. In normal application software, not much. In bandwidth bound stuff like image processing, or intense gaming, you'll notice.

You'll find everything you ever wanted to know. ;)

As was mentioned, it depends upon your usage. If you do the "standard" word processing, occasional spreadsheet, a few charts, email, medium level gaming, scan a couple of pics now and then, etc, etc, etc......don't bother; you won't notice the difference. However, if you decide to "broaden your horizons" and do some more intensive gaming, video editing, file conversions and even more intensive jpeg conversions; you will definitely benefit from DDR. Let your usage define your budget!

I did some 3D rendering, animation, and radiosity benchmarking in trueSpace 4.3 using my K7S5A with a 1.4GHz Thunderbird. Performance improvement with PC2100 (aggressive timings) versus PC133 (aggressive timings) ranged from 0% to 10% depending on the nature of the test. Maybe with a faster CPU it would matter more.

i am doing doing a lot of rendering on my system and although the K7S5A do not officially support PC2700 DDR.. i've flashed my BIOS w/ the Cheepoman BIOS and o/c my system to 150/150 MHz (CPU/RAM) and set the timing to Ultra.. and it gives about 15~20% faster compared to PC150 SDR with same timing settings...

usually if i render a scene using the 150 SDR RAM it takes about 34 mins
with PC 2700 DDR it takes only 23~28 mins....

so in my case it a lot faster.. ( and it gives of better scores in 3dmark 2001 SE.. avging 12500 with SDR and 13130 with DDR with the above clock settings )

Oh yeah! running synchronously@150fsb with DDR will definitely give a nice boost,and ain't too shabby for a board that's been around for nearly 18months now eh? :)
