If I were to install the OS, games, apps on the SCSI drive and have storage done on the RAID 0 (such as .mov files, .mp3 files, images, etc.) would that elimate the bottlenecks of the the storage system in my PC?

Why stop in Chicago if you're going to New York. I have three Seagate UF/W Cheetahs in a RAID 0 with a Mylex controller and disabled the IDE's altogether. No bottleneck to be seen.

Nice to go Mylex hardware RAID if you can afford it, expect to pay at least a grand for a nice setup though. If you run RAID you should run it on your OS (boot) drive because that one is used the most (for boot, swap file, etc.) not as much advantage in a RAID storage drive unless you are doing bandwidth intensive work such as real time video editing.
