Sour Cream

I was actually just googling it and they did say sour cream can be used in a pinch but it's sour where as creme fresh is sweet.

Another article said creme fresh can be found at safeway near where they sell sour creme, not sure if that was just in America or what.

I have my eggs like that made all the time, but with whipped cream or milk instead of creme freche. Spread over toast. It's the technique that gives most of its fluffiness, the cream and butter mainly adds extra flavour. Frankly you can use greek yogourt, whipped cream, sour cream, creme freche, milk, or none. You have to make sure that it doesn't start to fry / burn, so it's constantly mixing and scraping the bottom of the pan, and taking off the stovetop here and there when it's too hot to have it not cooking too fast.
 
im actually surprised that there has not been one post on how unhealthy Ramsey egg recipe is. half a stick of butter and a healthy blob of more fat..
 
I wanted to do this but I can't find creme fresh at the supermarket🙁

Creme fresh (or crème fraîche for fancy people) is a European sour cream. It's a lot lighter than our version and not as "sour" tasting. You can simulate it by stirring a bit of unflavored yogurt and a splash of milk to some sour creme until it has a very light peak.

Everything is in moderation. Nothing wrong with that on a Sunday morning, much like a lot of us devour 1200 calories of pancakes on a weekend.

Dinner last night was a couple scrambled eggs, mixed vegetables, a splash of habanero sauce, and feta cheese.

The cheese was a mistake. Otherwise, I'll probably do that again.
 
I just tried it, I didn't like it.

I didn't have mushrooms, tomatoes or chives and I substituted sour creme for creme fresh.

I also didn't have a spatula, I used a wooden spoon instead.

I thought I had the right consistency but it got watery again when I added the sour cream, so back on the stove. It was still a little watery, hard to judge, but it looked like puke.. I put ketchup on it. It's crap.

I like cooking scrambled eggs the old north american way, the way that lady did it in the other video but instead of water I add some milk and sometimes grated cheese. I like the eggs cooked much more and I like them yellow not puky white.

Sour cheese and eggs is a no-no. They'll clash (like you've found 😀.) Sharp or creamy cheeses are your best bet. If you're looking for something besides boring cheddar, a few I've had really good results with are:

Gruyere - melts really well, has a very creamy taste
Fontina - very powerful when it melts. Good for cheese lovers
Oaxaca - a Mexican cheese similar to mozzarella but with a stronger flavor

I'm usually a fan of spinach/mushroom/feta omelets, hence the attempt.

Moderation or not, a meal high in proteins and fats is a great meal no matter how you measure it all up.

But I'm of the Paleo-inspired mindset. Protein and fats good, carbs bad.
Then again, Paleo does tend to limit dairy intake. :hmm:
And any meal high in fat and protein is much harder to gorge yourself... and if it doesn't stop you from being a glutton, it definitely curbs your desire to eat more a few hours later.

I'm actually on Atkins (same concept) and it works very well. I mostly eat protiens, fats, and green veggies. Down 14 lbs in 3 weeks total.
