How would this fit in with evolution? Being a short giraffe would be a disadvantage correct? We're these giraffes crossbreed by humans?

They won't be breeding. Mutation happens but only viable variants stick around.

Unless something has happened in their ecosystem whereby the extra long neck is a disadvantage, then the short giraffes might gain an advantage, get extra swole with all the extra food, lady giraffes want some of those superior genes for their babies, thus Napoleon Giraffe here becomes The Chosen Giraffe.
