When I order biscuits with sausage gravy, I expect my gravy to be loaded with sausage bits (I didn't order milk gravy).

And I hate when a place has milk gravy, but doesn't offer sausage gravy.
What kind of cruel trick is that? I see biscuits and gravy as a meal choice, and I start thinking of wonderful sausage gravy.

Yeah, some people accept gravy that is made with sausage pan drippings/lard rather than real chunks/bits of sausage.

I never heard of it either. I have heard of Bob Evans though. Never knew that the gravy on their biscuits and gravy was sausage gravy though. Guess its a southern thing.

Sausage gravy is definitely southern style white gravy made with sausage grease/drippings AND/or (much preferably) small chunks of actual breakfast sausage meat.

Start with a roux of butter, grease from sausage, and some white flour. Then you ever-so-slightly brown the roux, stir-in some milk, and add the sausage bits. Simmer and frequently stir until reduced to a gravy consistency. Delicious.

Normal "any kind" of gravy is just that.

Fatties turned it into needing almost everything you cooked to create it included in it now.

when my grandpa made sausage gravy, he used the bacon grease, sprinkled some flour in it, cut up pieces of sausage and 1 chicken boulion cube...so that recipie is what I think of whenever I hear sausage gravy.
of course I think bacon grease was a staple ingredient in everything he made.
