I have 2 Western digital HD and I'm going to run SATA RAID 0. How are the dip switches supposed to be set? Should I just leave it on cable select or should I change it to single drive for this setup?

SATA drives don't need jumpers. Unless you are using a PATA-to-SATA adapter on two IDE drives.

That's what I'm using - 2 abit pata to sata adapters. So I should remove the jumpers entirely for this setup?

Usually with adapters it's recommended to jumper them as master.
