looks like the basin is catching blood. so I'm guessing some type of guillotine then blood draining.
 
What you usually do w/ chickens is you slit its throat and hold it upside down by its feet to drain all the blood. But because turkeys are so damn large, they made a special funnel to hold the turkey during the blood draining process.

i thought it the funneling is used to drown the turkey.
