My vote is for the Yale's 1909 ultimate perfect college football season, unbeaten and unscored upon. The Iron Dukes and Tennessee both came close but lost in the bowl game.
 
7 time World Driver's Champion, Michael Schumacher. Previous record holder was Juan Manuel Fangio who previously set the record at 5 back in the 1950s.

Wilt Chamberlain's 100 point NBA game. Heck it is hard enough for most teams to score 100 points now much less an individual.

In 1961-62 season he averaged 50.4 points per game. In 1960-61 he averaged 27.2 rebounds. Two records that will not be broken.
 
Cy Young's 511 pitching victories. Nobody will ever even come close. I'm not sure we will ever have many 300 game winners anymore either.
 
Definitely the 100 point game. I also think Lance's Tour de France record will stand as well. Who knows though? After McGwire broke Maris' single-season HR record no one thought it would be touched upon for a while.
 
since a lot of good ones have been mentioned, let me throw in dimaggio's 56-straight games with a hit into the hat.

edit: let me add johnny vander meer's 2 no-hitters back-to-back. certaintly not impossible, but with the ever changing strike zone and batter's seeing better pitches...
