Verbal = words written or spoken. You probably mean oral.
And oral contracts (*chuckle*) are just as valid as written ones, they're just a lot harder to prove that they exist.
IANAL, but the little bit of law we've done in business school has taught me that there are a few things required for a contract, and none of them include anything written.
Generally you need an offer, intent, consideration, capacity, and acceptance (there may be a few others, but I can't remember them). Nothing needs to be written down and wikipedia backs this up: 'An unwritten, unspoken contract, also known as "a contract implied by the acts of the parties", which can be either implied in fact or implied in law, may also be legally binding.'
It seems that all those conditions existed, and the roommate can prove this by showing the cashed rent cheques. Thus, the roommate is probably considered a tenant and has tenant's rights.

I understand these are considered binding as written agreements, but again, I seriously doubt she has her shit together enough to properly fight this and it would be even more difficult if nothing is written down. My experience with these types of people shows them to not be all that well organized.
