I can think of 4 off hand:

Eric Clapton - Layla
Faith No More - Epic
Spacehog - In the Meantime
Smashing Pumpkins - Mellon Collie And The Infinite Sadness

Dream Theater - Blind Faith, Dance of Eternity... not really piano-based songs, but the keyboard parts are awesome, including the segments where a piano is used. :)

I know it's "Pop Rock", but how about the soothing intro and melody of "Tiny Dancer" by Elton John. Another would be "Saturday nites all right for fighting" which is more up tempo.

I don't think you guys are getting what he meant be "piano solo". I think he meant a prolonged part of the song where the MAIN instrument is the piano. There should be no vocals during a piano solo (although there might be background strings, drums, etc.)

Tori Amos, Kate Bush, Joe Jackson - probably several / many by each but my sleepy brain isn't thinking of specific songs.

The live version of Lynrd Skynrd's "The Breeze" has a 1-2 minute piano solo. As pianists go, Billy Powell is kind of sloppy but it's okay.

For older "rock", there's always: Jerry Lee Lewis and Fats Domino

Not a rockin' song but Lynrd Skynrd's "All I Can Do Is Write About It" has a beautiful piano solo. Probably my favorite song by them.
