ROAD TRIP!!!! NC to Vegas!

My sister does not drive long distance well, so I will be driving her car from Raleigh to Las Vegas. (then flying back).

I will be taking I-40 all the way. I figure Memphis Tennessee will be a good place to stop (I used to live in Nashville years ago so I have no desire to stop there).
What are "must see's" on the trip from NC to vegas on I-40????
