Review My i7 Build - Help with Vid Card Choice

Hello all, I've been reading all of the build topics and have a pretty good idea of what I'm going to do but wanted to ask for any input before I made the purchase.

1. What YOUR PC will be used for - Gaming / Internet

2. What YOUR budget is - 1500-1700

3. What country YOU will be buying YOUR parts from - US

4. IF YOU have a brand preference. Nope

5. If YOU intend on using any of YOUR current parts, and if so, what those parts are - Keyboard / Mouse / Speakers

6. IF YOU have searched and/or read similar threads - Indeed

7. IF YOU plan on overclocking or run the system at default speeds - Don't know how so not at first.

8. WHEN do you plan to build it - 7-10 Days

Here is what I have picked out.

i7 920 (DO stepping)
Gigabyte EX58-UD4P
XIGMATEK Dark Knight

- Do I really need something other than the stock cooler if I'm not overclocking?

G.SKILL 6GB (3 x 2GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800)
- Or OCZ Platinum for $20 cheaper

Western Digital Caviar 640GB 7200 RPM 32MB Cache SATA 3.0Gb/s
LG Black 22X (CAV) DVD+R 8X DVD+RW 16X
Cooler Master RC-690
Corsair 750W
Windows 7
Samsung 2433BW High Glossy Black 24"

Of course the hardest decision - video card.
EVGA GTX275 x2

I've gone back and forth between 260 in SLI, just getting one 275 for now, going ahead with a second in SLI or moving up to the 295 to have room to add another in the future. I just can't make a final decision on this part so any thoughts would be appreciated.

One of the Anandtech mods suggested going with a GTX275 card for my Photoshop/gaming rig and that is what I'm planning to do.

Thanks Maui. I really think a single 275 would be all I need for right now and a second would be overkill...cheaper to add the second in 6-12 months if need be and would shave approx $240 off my build.
